Unexpectedly Rich Roast Chicken and Butternut Squash

This vibrant dish features a whole chicken generously seasoned with The Unexpected, promising a burst of savory and aromatic flavors as it roasts to golden perfection. Alongside, halved butternut squash are coated with Stella Foods The Daily herb & spice blend, enhancing their natural sweetness with bright and herbaceous notes. This balanced and comforting meal is prepared in a flash with minimal effort.

Ingredients:

  • 1 whole chicken (about 3-4 lbs)
  • 2-3 tablespoons Stella Foods The Unexpected herb & spice blend
  • 1 butternut squash, halved lengthwise and seeds scooped out
  • 1-2 tablespoons Stella Foods The Daily herb & spice blend
  • 1-2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Chicken: Pat the whole chicken dry with paper towels. Generously rub the Stella Foods The Unexpected herb & spice blend all over the chicken, ensuring even coverage. Season the cavity with salt and pepper if you wish. For even more flavor, create a compound butter by combining butter with The Unexpected and rub that under the skin. 
  3. Prepare Squash: Place the halved butternut squash on a baking sheet. Drizzle the cut sides with olive oil and then sprinkle generously with Stella Foods The Daily herb & spice blend. Season with salt and pepper to taste.
  4. Roast: Place the seasoned chicken on the same baking sheet as the squash. Roast for approximately 1 hour to 1 hour and 15 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C in the thickest part of the thigh) and the squash is tender when pierced with a fork.
  5. Rest and Serve: Once cooked, let the chicken rest for 10-15 minutes before carving. Serve the roasted chicken alongside the tender and flavorful butternut squash.
