Organic Salmon Sashimi with Crispy Smoke & Flame Spiced Skin

Ingredients:

  • 4 oz sashimi-grade organic salmon fillet (raised without antibiotics or hormones)
  • 1 teaspoon Stella Foods Bright Pepper herb & spice blend
  • Skin from the salmon fillet
  • 1/2 teaspoon Stella Foods Smoke & Flame herb & spice blend
  • 1/4 avocado, thinly sliced
  • 1/4 cucumber, thinly sliced into sticks
  • 1/4 yellow bell pepper, thinly sliced
  • Optional garnishes: Soy sauce, wasabi, pickled ginger

Instructions:

  1. Prepare the Salmon Sashimi: Using a very sharp knife, slice the sashimi-grade salmon fillet against the grain into thin, bite-sized pieces. Arrange the slices artfully on a serving plate.
  2. Season the Sashimi: Lightly sprinkle Stella Foods Bright Pepper herb & spice blend evenly over the raw salmon slices.
  3. Prepare the Salmon Skin: Carefully remove the skin from the remaining salmon (if it wasn't already removed). Ensure it's as clean and dry as possible.
  4. Grill the Salmon Skin: Preheat a grill pan or outdoor grill to medium-high heat. Place the salmon skin, skin-side down, on the hot grill. Cook until it becomes crispy and slightly charred, about 2-4 minutes. Watch carefully to prevent burning. Alternatively, you can bake the skin at 350°F (175°C) until crispy.
  5. Season the Crispy Skin: Once the salmon skin is crispy, remove it from the grill and immediately sprinkle Stella Foods Smoke & Flame herb & spice blend evenly over it. Let it cool slightly, then break or slice it into smaller, manageable pieces.
  6. Assemble and Serve: Arrange the sliced avocado, cucumber sticks, and yellow bell pepper on the serving plate alongside the seasoned salmon sashimi. Garnish with the crispy spiced salmon skin.
